my favorite part about the recipe is pre-soaking the turkey for 24 hours in a BRINE before you Roast it. I have used a brine before when cooking other meats and it totally tenderizes and moistens the meat to perfection. So I am confident this will do exactly that....can't wait to eat our Thanksgiving Turkey! TIP: make sure you don't add any more salt to your meat when you start cooking it, otherwise it will be way too salty as you have already soaked it in the brine. {This recipe is for an 18-20LB turkey, if you use a smaller one then you may want to adjust the ingredients as well as the time for soaking would be a lot less.}
